I've installed elasticemail in magento 1.9.1.2 and it all apeears to look fine (although the dashboard shows an error because I do not have any credits (HTTP Error 411. The request must be chunked or have a content length.)

everything else looks fine - I have entered the api, user password etc - the dashboard indicates that is all fine.

is there something else I need to turn off or set in Magento to stop it using the host server to send email?

Kindly note that our Elastic Email extension will be compatible up to Magento version 1.8.
Once we update our extension to latest Magento version, we will let you know.
